These Loaded Smashed Potatoes Are My New Obsession (Crispy, Cheesy, Bacon Perfection)

I’ve been seeing smashed potato recipes everywhere on Reddit lately, so when I stumbled on this loaded version I knew I had to try it immediately. I made them last night as a side dish and they were so good we basically ate them as the main event. Crispy edges, fluffy centers, loaded with bacon and melty cheese they’re dangerously addictive.
These are perfect for game nights, casual dinners, or whenever you want something a little extra. My only regret is not doubling the recipe because they vanished fast!
How It Went in My Kitchen
Boiling and smashing the potatoes was surprisingly satisfying (and a great way to work out some stress). I loved how the little potatoes got those beautiful crispy edges in the oven. The bacon and cheddar took them over the top, and that homemade sour cream dip? Absolute perfection for dipping.
I may have hovered over the oven watching the cheese bubble like a total nerd.
The Full Recipe
Loaded Smashed Potatoes with Bacon & Cheese
Ingredients
18 little potatoes (whole)
6 pieces bacon (cooked and chopped)
120 g yellow cheddar (shredded)
2 green onions (sliced)
180 g sour cream
1 tbsp chives (chopped)
1 tsp garlic powder
1 tsp onion powder
2 tbsp extra-virgin olive oil
1 tsp salt
0.5 tsp black pepper
Directions
- Boil the potatoes for 10-15 minutes, until fork tender.
- Preheat oven to 232°C (450°F). Line a baking sheet with parchment paper.
- Evenly spread out the boiled potatoes on the baking sheet. Use a jar or glass to gently smash each potato.
- Drizzle with olive oil and season with salt and pepper. Bake for 15 minutes.
- Remove from oven, sprinkle with chopped bacon and shredded cheddar. Return to oven and bake another 5-8 minutes until cheese is bubbly and melted.
- Meanwhile, mix together sour cream, chopped chives, garlic powder, onion powder, salt, and pepper to make the dip.
- Garnish the potatoes with sliced green onions. Serve hot with the sour cream dip on the side.
My Thoughts & Tips
- The smashing step is so fun don’t be afraid to get them nice and flat for maximum crispiness.
- I used thick-cut bacon for extra texture.
- These are best served straight from the oven while the cheese is still gooey.
- Leftovers (if you have any) reheat surprisingly well in the air fryer.
These loaded smashed potatoes are pure comfort food joy. They feel a bit fancy but are actually very easy. I’m already thinking about what other toppings I can add next time maybe jalapeños?
