The Best Creamy Macaroni Salad for Summer Potlucks (4th of July Approved!)

Summer potlucks are in full swing and I was on the hunt for a really good macaroni salad. I found this one on Reddit and it sounded exactly like the classic creamy version my aunt used to make. I tried it yesterday for a little family get-together and it was a huge hit creamy, tangy, with the perfect balance of crunch and sweetness.
I made one small tweak (added a touch more sour cream for extra creaminess) and it turned out dreamy. It’s one of those recipes that tastes even better after sitting in the fridge for a couple of hours.
My Kitchen Experience
Boiling the eggs and chopping everything felt nicely nostalgic. The dressing came together beautifully that little bit of apple cider vinegar and sugar really makes it special. I was worried it might be too heavy on the mayo, but it was just right.
We served it on a bed of lettuce like the recipe suggested and it looked so pretty with the paprika sprinkle on top. It disappeared fast I barely got leftovers!
Creamy Macaroni Salad (Perfect for the 4th of July or any summer gathering)
Ingredients
3 cups elbow macaroni, uncooked
5 large hard-boiled eggs, peeled and chopped
2 celery ribs, finely diced
½ cup red bell pepper, finely chopped (optional)
⅓ cup red or sweet onion, finely chopped
½ cup sweet pickles, chopped (or ⅓ cup sweet pickle relish)
1 ½ cups mayonnaise (Duke’s or Hellmann’s preferred)
¼ cup sour cream (optional for extra creaminess)
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
2 teaspoons sugar (to taste)
½ teaspoon salt (or to taste)
½ teaspoon freshly ground black pepper or white pepper (or to taste)
Paprika and chopped parsley, for garnish
Optional: curly leaf lettuce for serving
Directions
- Cook the macaroni according to package directions until al dente. Don’t overcook! Add about ¼ teaspoon salt to the boiling water.
- Drain and rinse the pasta under cold water to stop the cooking. Let it cool completely.
- In a large mixing bowl, combine the chopped eggs, celery, onion, bell pepper (if using), and sweet pickles.
- In a separate bowl, whisk together the mayonnaise, sour cream, mustard, apple cider vinegar, sugar, salt, and pepper until smooth and creamy.
- Add the cooled macaroni to the vegetable and egg mixture. Pour the dressing over everything and stir gently until well coated.
- Taste and adjust seasonings as needed. Cover and refrigerate for at least 1–2 hours before serving.
- Garnish with a sprinkle of paprika and chopped parsley. Serve on lettuce leaves if desired.
This is now my official go-to macaroni salad. It’s creamy but not heavy, has great texture from the celery and pickles, and that hint of sweetness keeps you coming back for more. Perfect side dish for burgers, grilled chicken, or anything off the grill.
Highly recommend making it the day before the flavors meld together so nicely.
