The Easiest Slow Cooker Chuck Roast That Actually Tastes Amazing

This week I was craving real comfort food but didn’t feel like standing in the kitchen for hours. While scrolling Reddit I found this super simple Slow Cooker Chuck Roast recipe and decided to give it a try on a rainy Tuesday. I’m so glad I did it made the house smell incredible all day and turned out ridiculously tender.
I love recipes like this because you just throw everything in and let the magic happen. My only “adventure” was that I got a bit distracted and added the rosemary a little late, but it still worked out great.
I seared the chuck roast first (highly recommend doing this step it gives way better flavor). The onions, carrots, and baby potatoes soaked up all those delicious juices. The soy sauce and tomato paste combo created this rich, savory gravy that I ended up spooning over everything.
We ate it with some crusty bread to soak up the sauce. My husband went back for thirds and even the picky eater in the family loved it. Total winner for busy days or when you want leftovers that taste even better the next day.
Slow Cooker Chuck Roast (Serves 4-6)
Ingredients
1.5 lbs chuck roast
2 white onions, halved
1 bag mini potatoes
Long carrots, peeled & cut into chunks
2 fresh rosemary sprigs
1 cup water
3 tbsp soy sauce
2 tbsp tomato paste
2 tbsp olive oil
1.5 tsp salt
1 tsp black pepper
3/4 tsp garlic powder
Directions
- Heat olive oil in a pan and sear the chuck roast on all sides until nicely browned.
- Place halved onions, carrots, and mini potatoes in the bottom of the slow cooker.
- Season the roast with salt, pepper, and garlic powder, then place on top of the vegetables.
- Mix together water, soy sauce, and tomato paste. Pour over everything.
- Add the rosemary sprigs on top.
- Cook on low for 8-10 hours (or high for 5-6 hours) until the meat is fall-apart tender.
- Don’t skip the sear it makes a big difference.
- I added a splash of Worcestershire sauce because I had it on hand and it deepened the flavor nicely.
- Leftovers make killer sandwiches the next day.
This one is going straight into my regular rotation. Perfect cozy dinner with minimal effort. If you’re looking for set-it and forget-it meals, definitely try this!
