My First Homemade Lamb Pide Reddit Didn’t Lie!

I was deep in a Reddit spiral last week in r/recipes when this Turkish-style Lamb Pide caught my eye. It looked warm, flavorful, and like the perfect weekend cooking project. I tried it Saturday and it turned out so good I’m still thinking about it. Here’s my full experience!

The filling was fragrant and delicious. I used lamb mince and went a little heavier on the fresh mint because I love that bright pop. The spices smelled incredible while cooking my husband kept “helping” by hanging around the kitchen.

The dough rose beautifully (yeast win!). My ovals were a bit wonky but they baked up golden with nice sesame crusted edges. I added a mix of mozzarella and feta on top because cheese makes everything better.

One small lesson: make sure the filling is fully cooled before assembling, otherwise you might get a slightly soggy bottom. Other than that, it was pretty straightforward and fun.

We devoured both pides with a simple salad and garlic yogurt. Total success this one is going into regular rotation!

The Recipe I Used

Makes 2 large Pides

Ingredients

  • Filling:
  • 500g Lamb Mince (or beef)

  • 1 Tbsp Oil

  • 1 Large Onion, finely chopped

  • 4 Garlic Cloves, minced

  • 3/4 Tsp Salt

  • 3/4 Tsp Black Pepper

  • 1 Tsp Ground Cumin

  • 1 Tsp Ground Coriander

  • 1/2 Tsp Ground All Spice

  • 1 Tsp Smoked Paprika

  • 1/2 Tsp Chilli Flakes

  • 1/2 Green Pepper, diced

  • 1/2 Red Pepper, diced

  • 1 Tomato, diced

  • 2 Tbsp Fresh Chopped Mint

  • 1 Tsp Lemon Juice

Directions

  • Add oil to a large pan on medium heat, then add garlic and cook for about 30 seconds. Add onion and cook until golden.
  • Add lamb mince, turn heat to high and cook for 5 minutes, stirring regularly.
  • Lower heat to medium-low, add all spices & seasonings, mix well. Add tomato and peppers and cook another 5 minutes.
  • Turn off heat, stir in lemon juice and fresh mint. Set aside to cool completely.

Ingredients

  • Dough:
  • 3 Cups Flour

  • 1 Tsp Salt

  • 3/4 Cup Warm Milk

  • 1 Tbsp Olive Oil

  • 1 Tbsp Yeast

  • 1 Tsp Sugar

  • 1 Egg

Directions

  • In a large bowl, add warm milk, sugar & yeast (don’t mix yet). Leave for 10 minutes to activate.
  • Add egg, salt, and oil. Mix, then add flour and combine until a dough forms. Knead until smooth and elastic (about 5 minutes).
  • Oil the bowl and the dough ball, cover with a damp towel, and let rise for 1 hour.
  • Preheat oven to 400°F (200°C).
  • Divide dough into 2. Roll each into an oval shape. Add half the filling to each, then top with about ½ cup cheese.
  • Fold the sides over the filling and pinch the ends together to seal.
  • Brush crusts with beaten egg and sprinkle with white sesame seeds.
  • Bake for 25-30 minutes until golden.

10/10 would make again. It’s impressive looking but totally doable at home. The spiced lamb with the soft dough and melty cheese is just perfect.
