These Jerk Chicken Wings with My Special Butter Sauce Were Fire

I’ve been on a serious grilling kick lately and decided to make Jamaican-inspired jerk chicken wings today. I went heavier on the pimento berries and scotch bonnet peppers for that authentic heat and aroma. Grilled them direct over lump charcoal with cherry and hickory wood chunks the smoke was perfect.
They turned out ridiculously good. Spicy, savory, smoky, and the special butter sauce I tossed them in at the end took them to another level.
My Grilling Experience
The marinade (dry rub + wet blended seasoning) was packed with flavor. Grilling direct wasn’t the easiest with the wet marinade (I kept a spray bottle handy to manage flare-ups), but it gave amazing char and crispiness. I stayed by the grill the whole time, flipping and moving them around so they cooked evenly.
Ingredients
- Dry Rub:
Paprika
Black pepper
Ginger powder
Garlic powder
Onion powder
Pimento powder
Lemon pepper
MSG
- Blended Wet Seasoning:
Onion, ginger, garlic, green onion
Scotch bonnet peppers
Thyme, parsley
Vinegar, lime juice, soy sauce, browning
Olive oil
Pimento berries
- Special Butter Sauce:
Unsalted butter
2 tbsp of the blended seasoning
1 cup homemade BBQ sauce
Directions
- Marinate wings in the dry rub + blended wet seasoning (ideally for a few hours or overnight).
- Grill direct over charcoal with wood chunks until cooked through and nicely charred. Keep moving them and manage flare-ups.
- Make the sauce: Melt butter, add blended seasoning and BBQ sauce, simmer.
- Toss hot wings in the sauce right before serving.
These jerk wings were spicy, smoky, and incredibly flavorful. The butter BBQ jerk sauce is addictive it’s not a traditional jerk sauce but it works so well. Definitely a new favorite!
