I wanted to make something special this weekend and went all in on this stuffed pork loin recipe I found on Reddit. It’s got a flavorful sausage apple walnut sourdough stuffing, wrapped in juicy pork, and finished with an apple butter BBQ glaze. It looked intimidating but was so worth the effort. The house smelled unbelievable while it roasted!
This is definitely “company coming over” food. My family was very impressed.
How It Turned Out
Toasting the sourdough cubes and fennel seeds gave the stuffing such a nice depth. The whiskey reduction added a subtle warmth. Butterflying and rolling the pork was easier than I thought, and the final sear + roast gave beautiful color and flavor.
The apple butter BBQ sauce at the end was the perfect sweet-tangy touch.
Stuffed Pork Loin with Sausage Apple Stuffing
Ingredients
2 cups sourdough cubes, toasted at 350°F for 10-12 mins
½ tsp fennel seeds, toasted and crushed
150g sausage, browned
2 tsp butter
⅓ onion, diced
1 celery stalk, diced
⅔ apple, diced
1½ tsp garlic, minced
2 tsp sage, ⅔ tsp thyme, ⅓ tsp oregano, 2 tsp garlic chives, green onion
4 tsp whiskey
¼ cup walnuts
3 tbsp broth
⅓ beaten egg
Umami salt & pepper
- Pork:
1 pork loin (~1.5 lb), butterflied to ½–¾ inch thick
Seasonings: salt, pepper, garlic powder
Apple butter BBQ sauce (for glazing)
Oil for searing
Directions
- Make stuffing: Toast bread and fennel. Brown sausage. Cook onion, celery, apple in butter. Add garlic, herbs, whiskey. Mix with bread, sausage, walnuts, broth, egg, and seasonings.
- Butterfly pork, season inside, spread stuffing, roll tightly and tie with kitchen twine.
- Season outside, sear on all sides. Brush with apple butter BBQ sauce.
- Roast at 400°F for 25-35 mins until internal temp reaches 140-145°F (brush with more sauce in last 10 mins).
- Broil 1-2 mins for extra caramelization. Rest 10 mins before slicing.
This stuffed pork loin is rich, juicy, and packed with flavor. The stuffing is next-level with the sourdough and whiskey. It feels fancy but is doable if you take your time.
