This TikTok Chicken Pot Pie with Cheddar Bay Biscuit Topping is Actually Life Changing

I kept seeing this viral chicken pot pie hack all over TikTok and finally caved and tried it today. I combined a couple of recipes, added my own tweaks, and it turned out ridiculously good. Creamy filling, tender chicken, and that golden cheddar bay biscuit crust on top? Chef’s kiss.

This is proper comfort food the kind that makes the whole house smell amazing and has everyone asking for seconds.

How I Made It

I seasoned the chicken generously and cooked everything in the same pan to keep cleanup easy. The filling came together quickly with the cream of chicken soup base and a splash of heavy cream for extra richness. Topping it with the Cheddar Bay biscuit mix was genius way better than regular pie crust.

The Recipe (My Tweaked Version)

TikTok Inspired Chicken Pot Pie with Cheddar Bay Biscuits

Ingredients

  • Chicken (breasts or thighs)

  • 2 white onions

  • 2 cans mixed vegetables

  • 2 cans cream of chicken soup

  • Heavy whipping cream

  • Cheddar Bay biscuit mix

  • Paprika, garlic salt, cayenne, onion powder, salt, pepper

  • Parsley

  • Olive oil

  • Salted butter

  • Flour

Directions

  • Season chicken well with spices and olive oil. Cook in a pan until fully done. Set aside to cool, then shred.
  • In the same pan, cook chopped onions until translucent. Add mixed veggies and a dollop of butter. Season generously.
  • Sprinkle a little flour over the veggies, cook 1-2 minutes, then stir in cream of chicken soup, a can of water, and some heavy whipping cream. Simmer until desired thickness. Taste and adjust seasoning.
  • Add shredded chicken to the filling.
  • Preheat oven to 400°F. Prepare Cheddar Bay biscuit mix according to package.
  • Grease a cast iron skillet (or oven-safe pan) with olive oil. Pour in the filling.
  • Scoop biscuit dough evenly on top.
  • Bake ~20 minutes until biscuits are golden.
  • Brush with melted butter (as directed on biscuit mix) and sprinkle with parsley.

This was so delicious and surprisingly quick for a from-scratch feeling meal. The biscuits on top soak up the creamy filling perfectly. It’s hearty, cozy, and great for feeding the family without spending all day in the kitchen.
